For the stuffed tortillas, I prepare all ingredients (like a taco bar) meat must be cooked. Place your favorites in a flour tortilla ( seasoned beef or chicken, tomato, cheese, onion) fold the bottom up so nothing falls out when standing upright. Fold or roll the tortilla narrowing the bottom. Place it in the griller. Robert Please griller in a warm oven or on the grill for a short time just before serving. Long enough for cheese to melt

I had company over the weekend. I wanted a simple but special dessert. I start with a box of brownie mix, (mix according to box directions) ,12 caramels, a dozen waffle cones . Place the cones in the pepper griller. Fill the cones 1/2 full of brownie mix. Drop a caramel in each cone, bake 12-15 minutes. Let the cones cool. While still a little warm place a scoop of ice cream on top. Serve them up. Watch for drips:)

I had the craving for something zesty and spicy but not "hot". This recipe is 2 part, the filling then a dressing filling; 1+ 1/2 cups shredded rotisserie chicken, 1 can of black beans,1 can of mexi-corn, 1 cup mozzarella cheese, 1/2 c mild salsa/ mix well dressing: 4 tbsp sour cream, 2 tble mayo, 1 tble cilantro, 1 lime zested and juiced/ mix, stir into filling. fill your cleaned jalapenos, sprinkle a little cheese on top./ bake at 450 for 30 minutes. This filling can be used in your bell peppers and poblanos too

It seemed like adding a post everyday this month would be a piece of cake...haha. We went to a late Christmas party last night. Robert made his favorite peppers as our side dish. He had jalapeños and sweet peppers, loaded with a "little smokie", bbq sauce, cream cheese. A little cheddar on top to keep the filling from drying out. Wrapped most of them in bacon. He left a couple without meat for me (he's very considerate). Baked at 350 for 35 minutes

I'm at the Dallas Market today and let me tell you "spring is in the air " All the showrooms have plenty of floral prints and beachwear displayed making me forget about the winter temperatures outside. They remind me of a vacation to Hawaii which reminded me of a pepper filling recipe: 2 8oz packages of cream cheese, 1 small can of crushed pineapple, 1 can of chicken. I hope you have the large tray. This will fill about 35 peppers. Aloha

January 1, 2023 What are your New Years resolutions? I'm going to shed a few pounds and so is my friend Ronaye. We are on the KETO Diet, which I have heard is the most popular this year. Did you know that you can make a KETO friendly stuffed jalapeno? jalapenos, cream cheese, cheddar, and bacon are all Keto friendly ingredients. stuff the jalapeno with cream cheese and cheddar, wrap it in bacon, set in the pepper griller. bake for 30 minutes
